Northwest Herring Week (June 20th – 26th) aims to restore herring to its proper place as a commercial fishery for human consumption. Revel’s Smoked Herring Pancake with chermoula, rapini & bagna cauda is part of the roundup of herring dishes available from restaurants around the city.

Rachel Yang, a Culinary Institute of America-trained chef, brings dishes like pork belly pancakes and corned lamb to the Pacific Northwest. “She’s really young and talented,” Shin says. “Seattle has a sizable population of Korean people, but you didn’t see anything fun or fusion.” The restaurant also offers Korean cooking classes and noodle workshops.
